Business Award Celebrations – Hog Roast Shenley

On Friday morning, we had a great time catering for a local business who were celebrating recently winning awards for their services. To treat his hard-working employees, the boss called and asked us to provide a corporate hospitality lunch of a tasty hog roast in Shenley. The business has less than 30 staff but we can cater for just about any number of people – from a small handful to a huge event with guests in the thousands.

As well as the hog roast in Shenley, we were also asked to provide a selection of potatoes, including new potatoes and baked potatoes, as well as some fresh salads. We can offer your business many different options of food, and with regards potatoes, we can cook these underneath your roasting hog; for this event, we had lots of baking potatoes on one side and a tray of new potatoes in a herb butter on the other side. We can create all kinds of lovely salads for you and in this case, the boss wanted a fresh green leaf mix and our homemade coleslaw.

I arrived at the company headquarters nice and early on Friday, to set up the gazebo, serving table and hog roast machine. It takes a few hours to perfectly roast a pig – around an hour per 10kg – so I got to work preparing it. I would have a catering assistant with me later on, once the hog was nearly ready, but I could easily handle this part by myself first. I scored the pig diagonally all over, covered it in water and then smothered it in salt, and then all I needed to do was keep a watchful eye on it, to check that it was cooking well and evenly.

While the pig was resting, my assistant arrived and helped me to prepare the fresh salads, dish out the apple sauce and stuffing and slice the bread rolls. As the queues started to form by the gazebo, we dished out the piping hot potatoes and then it was finally time to get the carving knives out…
