Swinging the night away with great music and a delicious hog roast in St Albans.

Tonight Spitting Pig Hertfordshire are hog roast catering at The Trestle Arts Base which is located in St Albans, Hertfordshire. Helen has asked Spitting Pig Hertfordshire to supply a mouth-watering spit roast for the Fleetville Swing Band. She was at a party that we catered for at the venue a year or so ago, and enjoyed the tasty hog so much, she made sure she kept our number safe so she could book us for band.  It is sure to be a night of not only a delicious St Albans hog roast but also full of music and dancing…… What a perfect recipe for a great night out!!
Fleetville Swing Band who are based in Fleetville, St Albans are a community based band who not only share their passion for music to the local community and charity events, but also are available for hire for many events including parties and wedding. The thirty strong professional and amateur musicians will entertain you and your guests with sounds of the big band era, jazz and swing, just the perfect recipe on a nice sunny warm afternoon with of course a Spitting Pig Hertfordshire hog roast in St Albans.
So today we are providing what I would say is our most popular menu for a laid back casual affair, we call it our snack menu which normally consists of the hog roast with all  the usual trimmings such as rolls, apple sauce and stuffing along with a fresh salad with a few surprises thrown in, that always have guests asking what are these delicious little red things? A homemade coleslaw which is crunchy, rustic and bursting with flavour and potato salad which is Ideal for Birthdays, Christenings or as an evening buffet at a wedding. Tonight we are changing the potato salad for roasted new potatoes which will be seasoned with rosemary and garlic. They are just amazing, just a little firm on the skin and almost mushy inside and just full of flavour!
It quite a busy one tonight, and 150 guests are expected to enjoy the hog roast catering in St Albans. Myself and Brandon, an amazing young chef that has been part of our team for four or five years now, are tonight’s chefs. After loading the van we set off to The Trestle Arts Base in plenty of time to set up and start cooking the St Albans hog roast.
It is still very cold, in fact it is freezing cold, and although we have a catering tent which we can put sides on which keeps us fairly warm once the hog roast machine is fired up, there was a joint decision between ourselves and the band to cook the hog outside and serve inside, it was just too cold for 150 people to queue and brave the wind and bitter cold.
So as the hog roast slowly roasted over about six hours, and the firm pink skin slowly changed colour to a golden brown as the crackling bubbled and crackled, Brandon and myself prepared the salads for later on.
We also set up the serving tables inside the Trestle Arts Base with crisp black linen and gleaming silver chaffing dishes which really looked the part for the occasion.
The Fleetville Band started playing at about 7:30pm and it was just sooooo relaxing as we started carving the hog roast and placing the meat in the chaffing dishes ready for serving in about an hour. At 8:30pm the band took a break and we were ready to serve the hog roast in St Albans. As well as the spit roast for the carnivores, we were asked to cater for a few herbivores and a vegan. We provided halloumi burgers which consist of griddled halloumi, aubergine, roasted red peppers and caramelised red onion…. Always a hit with the veggies. Our vegan guest was treated to stuffed roasted peppers with a spicy vegetable cous cous filling.
Everyone was served swiftly during the break and plenty came back for a second helping. We received many compliments on how delicious the food was and that the crackling was just the best they had ever had.
The second half of the night saw a change in the mood of the music and the band played a range of songs, some old classics and some great numbers to get the guests out of their seats and dancing the evening away. Although we were now back outside in the cold cleaning the machine and serving equipment, the music kept us happy while we cleared up.
