The clocks have gone back, the nights are now dark, cold and a bit gloomy and a haze of mist has descended across the narrow country lanes that lead Spitting Pig to Sarah’s house; where we are hog roast catering in Ashridge, which is an absolutely beautiful area in rural Hertfordshire. Ashridge is an area of outstanding national beauty and is home to the country Estate and stately home which is now Ashridge Business School. The magnificent home was built on the site of the former priory and was home to the Egerton family. It was requisitioned during World War 2 by Charing Cross hospital.
The 5000 acres of woodland surrounding Ashridgel & is managed by the National Trust and is perfect for long country walks or bike rides through the ancient forests which are home to herds of deer and an abundance of wild life.
Sarah’s house is tucked away up a long winding drive which tonight has scary creatures dotted a long the verge with eyes that seem to follow you as slowly drive past. If any one dares make it up the drive this will be a scary night!!
Spitting Pig set up our catering tent nice and early and added our own little touches to our marquee with cobwebs, bats and vampires that would have to be encountered before guests could tuck into their meat feast.
We were dressed in white cloaks and white hoods with nothing but our piercing eyes visible and sacrificed a young virgin who was picked at random from the guests, she was blind folded, trussed up on the spit pole and then roasted over roaring flames …… No only joking we don’t really get up to this sort of thing when hog roast catering in Ashridge…. I am sure there is a law against it!!
As the guests arrived they were greeted by the aroma of the hog roast which was wafting down the drive and many guests crowded around our catering tent to look at the hog roast Ashridge as it slowly rotated and roasted over the flames…. The crackling was now a light golden colour and crisping up nicely and guests were keen to know when serving time would be. A few hours more roasting was needed before the succulent pork could be enjoyed with an array of scrumptious salads and roasted new potatoes which were 
infused with rosemary and garlic….. At least that will keep the vampires away!

Although tonight while hog roasting in Ashridge we were scary, mean and menacing we warmed to every ones hearts as we served up the hog roast at 9:00pm on the dot. We had neatly sliced the back legs and loin for those who prefer the leaner cuts and the shoulders were left to cook a little longer until the meat was falling off the bone. We then mixed in a sweet chili dressing with chopped mint which has the most amazing flavour. Along with this, we kept the belly separate for those who like the juicer fattier cuts and kept aside the ribs which children were dunking in a sweet sticky sauce and could be seen licking the bones clean.
