Another manic weekend.

After yet another manic weekend last week, a few days rest was needed and Spitting Pig are gearing up for more hog roast feasts around the Hertfordshire country side.
We received a late call on Monday asking us to cater for an events company that was organising a hog roast in Burnham Green on Thursday. After the events company was let down by another company who offered ridiculously low prices, only to then inform them they could not honour the booking three days before the event.
Spitting Pig offer very reasonable pricing, we are not the cheapest, our prices reflect the quality of our products and the experience and skill of our staff. You get in life what you pay for and that is where Spitting Pig stand high above our competitors. We endeavour to provide the best possible standards and get it right just about every time.
Of course Spitting Pig was able to help. One call to the butcherswho supply our top quality free range hogs and other meats to ensure a hog could be sourced at such late notice, and the hog roast Burnham Green event for Thursday was on.
The event was a garden party at the Blacksmiths Arms, a very lively pub which has just received a garden make over courtesy of Magners Cider.
The garden party was a prize in a recent competition and the winner was treated to exclusive use of the garden, the yurt to relax in while watching a live band, a hog roast and of course a very large tab at the bar for the winner and his eleven guests.
It was a bit bizarre only having eleven hungry guests to feed and all though they ate very well they only got through about a quarter of the hog and delicious salads that we had prepared.
At the end of the evening all the guests were sent home with piggy bags of a succulent joint of hot pork, crunchy crackling and piping hot stuffing to nibble on as they headed home .
With five fairly local jobs this weekend, our fleet of vans and staff were gathering on Saturday morning to head of to there various functions through out Hertfordshire.
Our first team of Chefs, assistants and waitresses set of to cater for a spit roast. A small commuter town located along the A1M. It was an 80th Birthday party and the hog roast was to have waitress service, desserts and teas and coffees.
Hog roasts in Burnham Green are regular for myself and the team and once again we were at St Andrews Church. Spit roast catering for 250 guests at the family day event. They were treated to an array of tasty and colourful salads that compliment the hot succulent pork so well. With all guests served in about an hour, the hog and salads were devoured before they headed off for the evening entertainment.
A hog roast in a junior School was on the menu for a joint 40th Birthday bash for around eighty guests. We provided our ever popular pig in a bun menu and the host added there own salads which we happily placed on our serving tables for a feast while the band took a break.. Hog roast catering in Burnham Green is popular for us and we have taken a few bookings for next year already.
Now, we had two jobs on this weekend that are not quite the norm… We ended up cooking two hogs at our premises this weekend.
This is not some thing we normally do as we prefer to cook fresh on site to give the host the full experience of a hog roast turning on the spit from start to finish. It is a focal point and we truly believe this is the way for hog roasting events. But some times you have to pre cook away from the event location.

There is a small area we could of used for cooking our free range hog but it was decided this would be better utilised as a smokers area, so we opted to cook at our unit and deliver just before serve time.
This is no problem for us and we simply set up the serving tables, arranged all our equipment in place and prepared the salads at our well equipped catering unit.
Just before serve time we delivered the hog to the venue and our chefs carved the hog while our waitresses set the salads and potatoes in place on the serving tables.
At five o’clock on the dot we served a piping hot hog roast with the most crunchy golden crackling to around eighty guests.

Spitting Pig Hertfordshire have a well deserved weekend off next week (not sure what were doing yet) but with the subject of the hog tray method of cooking arising this weekend my next blog may well be about the two different methods of cooking and which is best….. the hog tray or the spit roast.
