Keeping the crowd fulfilled at mini rugby tournament with a hog roast in Little Gaddesden

little gaddesden hog roastIt’s a cold very fresh February morning but what a relief….. NO RAIN!! After a few weeks of absolute horrendous weather, we are forecast a dry, but windy day. We have been quite lucky here in Little Gaddesden actually compared with a lot of areas around the South East, where they have had serious flooding. Little Gaddesden area did actually make the news today with reports of a sink hole that opened up in a front garden of a house in Adeyfield. This hole just appeared at 7:00am and was about six meters deep and 10 meters wide. The foundations of the house were hanging over the hole so the people that lived there a long with other local residents have been evacuated while structural engineers decide what to do. The house in question is up for sale and my daughter had shown an interest in buying it a little while back… Scary!!
So, we are braving the weather and are providing pulled pork catering and hot drinks for the spectators who are braving the cold wind for a hog roast in Little Gaddesden standing on the side lines of the mini rugby pitches.
We have been asked to provide refreshments from about mid day until 4:00pm.
Pulled pork is a great way to enjoy a snack meal and is just absolutely so tasty…. The meat is so succulent and full of flavour that it will leave your taste buds in a frenzy of excitement as you tuck into the slow roasted pork that has been cooking for about eight hours.
We were asked to cater for about 500 players, supporters and officials on the day so we planned to roast 10 shoulders of pork to satisfy there hunger.
We decided to start the cooking process of at midnight the night before and placed the shoulders on the bone into the hog roast machines and marinated them in our homemade rub of paprika, herbs and black pepper, and started cooking on a low heat for the whole night. The secret to pulled pork or any other slow roasted meat is to cook for a long period on a lower heat. The meat breaks down and releases all the juices and with the homemade rub the resulting flavour just blows you away.
At about 8:00 am we returned to our catering unit to check the hog roast for Little Gaddesden and as we entered the yard we could smell the sweet aroma of freshly roasted pork wafting through the shutter doors engulfing the car park. We loaded our vans with the hog roasting machines, catering tent and serving tables and set off to the other side of Little Gaddesden to set up in time for when the tournament started at 10:00am.

As the crowds started gathering, we were in position and ready for action. Our urns were boiling and we were serving hot tea and coffee to the spectators as they headed of to the pitches to cheer on the young stars of the future.
Mid day was serving time and a queue had formed at about quarter to twelve. The catering tent was now bursting with the sweet smell of roasting pork and if any of the spectators were not hungry already, once they had a gulp of the sweet smell of roasting pork they soon would be.
We had made a homemade apple slaw to serve with the pulled pork. Fresh thin slices of nice crunchy apples, white and red cabbage, carrots and onion all mixed together with a creamy mayonnaise and crème fraiche dressing and of course a good pinch of cayenne pepper for that bit of zing that just tantalises your taste buds.
The spectators were served in a quick and professional manner with our hog roast chefs filling the warmed pitta breads with a good helping of the juicy roasted pork which was mixed with the chilli and mint and topped with the crunchy apple slaw. A nice hot cuppa was provided and it was the perfect snack to warm you up on a cold, windy day in Hertfordshire.
Many people came wandering back as they headed for the club house commenting on how delicious the pulled pork was and that they would be back for more when the final was on later.
We must have served about 600 people in the end…. It was just such a success. We served the last few pulled pork snacks just before the final whistle before having a well deserved pint and pulled pork in warm pitta bread for ourselves.
A quick clear up followed and we loaded the vans back up with our Hertfordshire hog roast machines and equipment and set off back to the unit to unload ready for the next hog roast catering event in Hertfordshire.
